Ingredients:

  • 3 medium or 2 large bananas (about 1 ½ cups mashed)
  • ⅓ cup unsalted butter, melted
  • ½ cup honey
  • 2 large eggs
  • ¼ cup milk
  • 1 tablespoon pure vanilla extract or paste
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional mix-ins or toppings: crushed nuts, chocolate chips, peanut butter glaze or frosting
  • Instructions:

  • Preheat and Prepare: First things first, let’s get our oven ready. Preheat your oven to 325 degrees Fahrenheit. Now, take an 8½x4½ inch loaf pan and grease it well. You can use butter, cooking spray, or even line it with parchment paper for easy removal. This step is crucial to prevent your beautiful banana bread from sticking.
  • Combine Wet Ingredients: In a large mixing bowl, start by whisking together the melted unsalted butter and the honey. This creates a lovely base for our wet ingredients. Once those are well combined and smooth, whisk in the two large eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Next, add your mashed bananas to the bowl. I like to mash my bananas with a fork until they’re mostly smooth but still have a few small chunks – this adds texture! Then, pour in the milk and the pure vanilla extract or paste. Whisk everything together until it’s thoroughly combined and you have a luscious, banana-infused mixture. The extra vanilla here really enhances the flavor profile, making it stand out from a standard banana bread.
  • Combine Dry Ingredients: In a separate, medium-sized bowl, combine your dry ingredients. This includes the all-purpose flour, baking soda, and salt. Whisk these together gently. This ensures that the leavening agent (baking soda) and salt are evenly distributed throughout the flour, which will help your banana bread rise evenly and have the perfect texture.
  • Combine Wet and Dry: Now, it’s time to bring everything together. Pour the wet ingredients into the bowl with the dry ingredients. Using a spatula or a wooden spoon, mix everything together just until combined. It’s really important not to overmix at this stage. A few streaks of flour are perfectly fine. Overmixing can develop the gluten in the flour too much, resulting in a tougher, less fluffy loaf. We’re aiming for soft and fluffy, so be gentle! If you’re adding any optional mix-ins like chocolate chips or nuts, gently fold them in now.
  • Bake to Perfection: Pour the batter into your prepared loaf pan. Smooth the top with your spatula. If you’d like to add a decorative touch or extra flavor, you can slice a banana lengthwise and lay it on top of the batter, cut-side up. This adds a lovely visual appeal and a bit of extra banana goodness. Place the loaf pan in your preheated oven. Bake for approximately 50-55 minutes. The best way to check for doneness is to insert a toothpick into the center of the loaf. If it comes out clean, or with just a few moist crum extractbs attached (but no wet batter), your banana bread is ready! If it’s still wet, give it another 5-10 minutes and check again.
  • Cooling and Serving: Once baked, carefully remove the loaf pan from the oven. Let the banana bread cool in the pan for about 15 minutes. This allows it to set up a bit more before you attempt to remove it. After 15 minutes, carefully invert the loaf onto a wire rack to cool completely. Resist the urge to slice into it immediately – letting it cool for at least 30 minutes (or even longer!) will ensure the flavors meld and the texture is just right. Once it’s cooled enough, slice it up and enjoy! This bread is wonderful on its own, with a smear of butter, or topped with one of the suggested glazes or frostings.
  • Notes:

How to make peanut butter cream cheese frosting:

    Ingredients:

  • 4 oz cream cheese, softened to room temperature
  • ¼ cup unsalted butter, softened to room temperature
  • ½ cup creamy peanut butter
  • 1 cup powdered sugar
  • Instructions:

Place cream cheese, butter, and peanut butter in a large bowl. Use a hand mixer or stand mixer to beat until combined. Add powdered sugar ½ cup at a time and beat until smooth and creamy. Spread over cooled banana bread.

How to make a peanut butter glaze:

    In a bowl, whisk together:

  • 3 tablespoons melted creamy peanut butter
  • ½ cup powdered sugar
  • 2 tablespoons milk
  • Pour over cooled banana bread.

I love how this banana bread turned out! It’s so light and fluffy – sweet but not too sweet. You could easily add mix-ins like nuts or chocolate chips, or keep it as a “blank canvas” for a nice smear of butter or peanut butter for breakfast.

    What flour should I use?

I have not tried using any other flours, but whole wheat flour should work just fine. If gluten-free, a 1:1 gluten-free flour or oat flour would be your best option. Almond flour may work, however, it may not hold together quite as well. Do not attempt with coconut flour (as it has a very different absorbency).

Are there any substitutions for using butter?

Instead of butter, you could use the same measurement of coconut oil, or your favorite dairy-free butter.

Can I make this banana bread without eggs?

I also have not tried using egg alternatives, but 2 “flax eggs” should work as well.

As always, if you make this Honey Vanilla Banana Bread or any of my other recipes, be sure to leave a review, and tag me on Instagram so I can see how it turned out! xx

    Frequently Asked Questions:

Can I use ripe but not overly brown bananas?

Absolutely! While very ripe bananas (with plenty of brown spots) offer the most intense sweetness and moisture, you can still achieve a delicious result with bananas that are just ripe. They might require a touch more sweetness in the batter, so you can adjust the honey slightly if needed. Just ensure they are mashed well to incorporate their flavor and texture effectively.

What’s the best way to store this banana bread?

To keep your Honey Vanilla Banana Bread at its best, store it in an airtight container at room temperature for up to 3 days. If you plan to keep it longer, wrapping it tightly in plastic wrap and then in foil before refrigerating will help it stay fresh for about a week. For even longer storage, you can slice it and freeze individual portions in freezer-safe bags.

Can I make this recipe gluten-free?

While this specific recipe is not designed for gluten-free baking, it’s often possible to adapt many banana bread recipes. You would typically need to use a good quality gluten-free all-purpose flour blend that contains a binder like xanthan gum. Experimentation might be needed to achieve the perfect soft and fluffy texture, as gluten-free flours behave differently.
